I’ve really been struggling with being middle aged lately. While I’m happy and confident with who I am, finally, I really miss the young, adventurous, wild and fun young women I once was. I found this quote and it really hit home.

Spicy braised spinach and shrimp

It doesn’t get much easier than this, y’all. Here’s what you need:

✔️ 1 bag of baby spinach. (Enough to fill a large mixing bowl. It shrinks down by a third).

✔️ 1 lb of shrimp. I get the deveined and peeled once because heck, it’s easier.

✔️ 3 pieces of bacon: cube it and render off the fat. Drain on a paper towel and dispose of the grease in the pan. Don’t wipe out the pan, though! Save that yummy goodness.

✔️ half of a white onion-diced finely

✔️ 2 cloves of garlic-minced

✔️ red pepper flakes, salt and pepper to taste.

✔️ teaspoon of coconut oil

Once you’ve rendered the bacon, set it aside. In the pan you cooked the bacon add the coconut oil and sauté the onions, garlic and red pepper flakes. Once soft, add in the shrimp and cook for about two minutes. Season with salt and pepper. Add in the spinach, and gently fold in to the pan. It will shrink down pretty quickly. I like mine with a bite so I only cook it until slightly wilted.

This whole meal took a total of 10-15 minutes and was a big hit!!

Keto Crispy chicken!

Tonight’s Keto meal was baked crispy chicken coated with egg wash, spicy pork rinds and almond flour. Bake at 425 degrees for about 35-40 minutes. Let rest 10 minutes and serve with your favorite Keto friendly veggie. We had a few spears of asparagus with bacon.

A day to never forget 9/11/2001

I’ve started to notice as I age, that I don’t remember things as well as I used to remember. It could be a conversation that I had just a short 30 minutes ago, or what I had for lunch yesterday, either way I seem to forget things a lot quicker than I did in my 20’s and 30’s.

 

But one day I will never forget is 9/11/2001. It was a day my life forever changed, and when I started to see the world for what it really is in reality. I was stationed at Scott AFB, IL, and was on my morning break outside when the news hit. Immediately thereafter, the base went on lockdown and all support teams were activated. I was on the Blood Donor center team, and my job was to help prepare units after they were drawn from the patients. Our team sprang into action, and over 16 hours later we had collected and prepared around 100 units of blood for both the victims and the first responders. That part of the day was a blur, and we honestly didn’t have time to really register what happened that morning and later in to the day.

 

But when I got home, reality hit. I was a single Mom at the time, and my roommate was watching my daughter who was only 2 years old at the time. Since the base was on lockdown and I lived ON the base, I invited all of my friends to come to my house to stay. We were all exhausted both physically and mentally and seeing the HUMVEES driving through the base only caused a higher level of fear. So we did what that group did best, and we hunkered down on my dilapidated couch, and held each other and cried watching the news. Seeing the bodies fall from the sky is a vision that I will never erase from my memory, along with the close knit family I had when I was in the military. While the day was a tragic day to say the least, I am so glad I had these people to share it with. My brothers and sisters in arms will forever be my family.

Often while I tend to forget the irrelevant things in life, moments like these will never be forgotten.

Sunday Sunday funday

Today we hit up our favorite place in St Pete for lunch, and then attended our first Tampa Bay Rays baseball game. What a blast. We’ve decided over the last few years we want to make sure our kids have great memories growing up, even if that means we don’t get to save a ton of money. I don’t want my kids memory of me to just be someone who worked all the time. Life is too short. Here are some fun shots from lunch and the game.

Pork chop Keto meal

Tonight I made a simple pan seared pork chop, cooked with just a pat of unsalted butter in a cast iron skillet. I seasoned it with some Cuban seasoning I got from a place called, “The Spice house” in St. Petersburg, FL.

I paired it with cheesy cauliflower purée. Boil half of a head of cauliflower until soft and save about 1/4 cup of the cooking liquid. Add a large tablespoon of cream cheese, 1/2 cup of mozzarella cheese and salt and pepper to your food processor (blender will work fine as well), and then add the cooked cauliflower on top. Blitz on high until smooth. Add a little of the saved liquid if needed to thin out the purée.

The avocado crema was simply 1 avocado, 1/4 cup of sour cream, juice of one lime, salt, pepper and cayenne with just a drizzle of olive oil.

Voila!
