Blue cheese beef meatballs, mushroom gravy and cauliflower mash

This year has started out a little rough for me. While I had talked about Self-love last week on the blog, with intentions of making more time for the things I love AND me in general, I instead continued to battle this wretched cough/cold. This weekend I finally felt better enough to venture out of the house with my daughter, and we got our nails done, ran errands, had lunch with a great friend and did a little shopping. I was a little worn out this afternoon, but was determined to get back to my Sunday supper ritual.

Today’s menu consisted of Blue cheese beef meatballs, mushroom gravy, and cauliflower mash with a side of sautéed asparagus.

Blue Cheese Beef meatballs

One pound of ground beef

1 cup of blue cheese crumbles

1 egg

Salt and pepper to taste (about 1-2 tsps. of salt, 1 tsp pepper

1 tsp of dried oregano

Combine and let chill for an hour. Bring to room temperature while the oven is pre-heating to 350 degrees. Bake for about 30 minutes or until fully cooked.

Cauliflower mash

1 head of fresh cauliflower

1/4 cup of low fat cream cheese

2 tsps. of unsalted butter

1-2 tsps. of salt, 1 tsp of white pepper, 1 tsp of garlic powder

Cup up cauliflower and cook in boiling water until soft.

Combine all ingredients in a food processor or blender and process on high for around 2-3 minutes.

Mushroom gravy

1 tsp of unsalted butter

6-8 portabella mushrooms, chopped

1 garlic clove, minced

1 package of Lipton Onion soup mix

4 cups of unsalted/low sodium beef stock

1/4 cup heavy cream

2 tsps. of corn starch and cold water, mixed well (this is called a slurry, you’ll add it to thicken the gravy)

In a sauce pan melt the butter and add the mushrooms and garlic. Cook until lightly browned. Add in the beef stock, and onion soup mix until combined thoroughly. Add in the heavy cream and the corn starch slurry and bring to a boil. Reduce down, and let simmer for 20 minutes. Puree or leave chunky! Your call!

I rounded the dish out with some simple sautéed asparagus with a little salt, pepper, and a pat of butter.

Keto cups

Tonight I made quick and easy turkey, arugula, egg and Gouda cheese cups for dinner. Spray a muffin tin with non stick spray and put the turkey in the tins pushing down the middle. Add arugula and an egg, and sprinkle with Gouda cheese. Season with salt and pepper to taste. Bake at 350 for about 10-12 minutes. Yum!

Sorry I’ve been absent lately. Life just gets in the way sometimes and blogging from my phone is a pain. Hope y’all are doing well. Share with me your favorite low carb recipe!

Four weeks of Keto-recap!

We’ve been doing the Keto diet for 4 weeks now. While I’ve wanted to cheat with soft pretzels at Disney and chips with my work lunch’s, I’m proud to say I’ve refrained from it all!

I am down 4.5 lbs and my hubby is down 13+ lbs!! I still have five lbs to go and happy with the slow and steady loss.

Our weekend was quiet and today was another glorious day in the sun at our neighborhood pool!

Dinner was baked wings and cauliflower mash.

Spicy braised spinach and shrimp

It doesn’t get much easier than this, y’all. Here’s what you need:

✔️ 1 bag of baby spinach. (Enough to fill a large mixing bowl. It shrinks down by a third).

✔️ 1 lb of shrimp. I get the deveined and peeled once because heck, it’s easier.

✔️ 3 pieces of bacon: cube it and render off the fat. Drain on a paper towel and dispose of the grease in the pan. Don’t wipe out the pan, though! Save that yummy goodness.

✔️ half of a white onion-diced finely

✔️ 2 cloves of garlic-minced

✔️ red pepper flakes, salt and pepper to taste.

✔️ teaspoon of coconut oil

Once you’ve rendered the bacon, set it aside. In the pan you cooked the bacon add the coconut oil and sauté the onions, garlic and red pepper flakes. Once soft, add in the shrimp and cook for about two minutes. Season with salt and pepper. Add in the spinach, and gently fold in to the pan. It will shrink down pretty quickly. I like mine with a bite so I only cook it until slightly wilted.

This whole meal took a total of 10-15 minutes and was a big hit!!

Keto Crispy chicken!

Tonight’s Keto meal was baked crispy chicken coated with egg wash, spicy pork rinds and almond flour. Bake at 425 degrees for about 35-40 minutes. Let rest 10 minutes and serve with your favorite Keto friendly veggie. We had a few spears of asparagus with bacon.

Pork chop Keto meal

Tonight I made a simple pan seared pork chop, cooked with just a pat of unsalted butter in a cast iron skillet. I seasoned it with some Cuban seasoning I got from a place called, “The Spice house” in St. Petersburg, FL.

I paired it with cheesy cauliflower purée. Boil half of a head of cauliflower until soft and save about 1/4 cup of the cooking liquid. Add a large tablespoon of cream cheese, 1/2 cup of mozzarella cheese and salt and pepper to your food processor (blender will work fine as well), and then add the cooked cauliflower on top. Blitz on high until smooth. Add a little of the saved liquid if needed to thin out the purée.

The avocado crema was simply 1 avocado, 1/4 cup of sour cream, juice of one lime, salt, pepper and cayenne with just a drizzle of olive oil.

Voila!

Keto beef stroganoff recipe

This one is super easy, y’all.

Sautéed garlic (1 clove) and about two tablespoons of red onion in coconut oil. Add some chopped mushrooms and red pepper flakes if you like a little heat. Cook until soft-3-4 minutes. Add a cup of heavy cream and cook down for a few minutes. Season to taste with salt and pepper. While this magic is happening, “zoodle” three zucchini’s and brown 1 lb of ground beef in a teaspoon of coconut oil and season with salt and pepper and a little season salt.

Add the zoodles to the sauce, mix well and then add the beef-draining any excess grease before adding. I added a little mozzarella for some creaminess and served!!

Labor Day laboring.

We got rained out today and I was initially pretty bummed to spend a day inside. But when my youngest daughter came home from the mall with a gift for me, I was instantly cheered up.

Once our groceries were delivered via Shipt, I dove in for meal prep and dinner prep. I chopped a bunch of veggies, made some baked chicken and made turkey burgers for dinner. I also made egg, spinach and mushroom “muffins” for quick easy meals this week.

Here’s to week three of our Keto diet! I am shooting for another good eating week and 3 runs this week, weather permitting. I was so pleased I had two good runs last week and a 6 1/2 mile walk at Epcot over the weekend.

Keto Meatballs

Tonight’s easy Keto meal. Meatballs with sautéed spinach. Meatballs: 1 lb of ground meat, 2 diced baby portobello mushrooms, 1/4 cup Parmesan cheese, 1 egg, salt and pepper to taste. Gently Work mixture together and form in to balls. Bake at 350 for 30 minutes. Top with a slice of fresh mozzarella and return to oven for a few minutes to melt. Sautéed spinach: slice three slices of bacon and cook until done. Drain the grease on a paper towel and wipe out (but don’t rinse!) the pan. Add one pat of unsalted butter, minced clove of garlic and red pepper flakes to the pan you cooked the bacon in. Place a heaping mound of spinach in the pan as it shrinks down. Add in your bacon and season with salt and pepper. Voila!! Cheers! We have bad storms here but I managed a 25 minute cardio workout while the meatballs were cooking! Gotta get it done while you can!

Spicy chicken wings with a broccoli and avocado purée

Here is my simple recipe for:

Spicy chicken wings seasoned with salt, pepper, cayenne and smoked paprika baked at 350 degrees for 35 minutes. My newest creation is broccoli cheesy jalapeño mash: made by boiling one head of broccoli, one jalapeño and two cloves of garlic. Save 1 cup or boiling liquid. Put one avocado into the food processor with the juice of half of a lemon or lime. Add the boiled veg and purée. If needed add some of the boiling liquid to thin out. Season with salt and pepper and add 1/4 cup of shredded cheddar cheese. Yum!! Who’s hungry!?!
