Time to be true-Two things…

 

 

Ok, so I started last year at a pretty dark place, but managed to finish on a pretty high note with lofty yet achievable goals. Running, writing, and researching recipes are high on my list this year mixed in with some awesome photography…Right?  Um…so yeah…about that…

 

Then, I cut my thumb on Christmas day, and my running, motivation, and goal making days halted all too quickly. BUT…thankfully only for just about a month.  Whew…bullet dodged.  I caveat this with saying I DID NOT/DO NOT want a repeat of last winter.  Ever.  Both the weather, and my mood were beyond frigid.

So here we go…

First:

I started running again last week.  My miles are minimal and my pace is slow as can be…but I’m MOVIN’…can I get a yahoo???  Today at work I had a leadership workshop of sorts to attend so my 8 hour day was squashed in to 4 hours of playing catch up.  I was tired by the time the final ‘bell’ rang, so upon arriving to my daughter’s school I texted my Maria…”I’ll be on the dreadmill in 30 minutes in case you want to join me.”  Of course she did, despite battling a migraine for 5 days, and her virtual hug and push helped get my on the mill.  2.6 miles, complete.

Second:

I hit the restart button after the holidays to try and lose my 5-7 lbs of marathon training/winter weight/I’m lazy and just ate all the food weight…so I’m back on MyFitnessPal for anyone else who uses this app, tracking my food and fitness and REALLY trying to stop eating all. the. chips.  I have to giggle when it says I should weigh a certain weight if I continue to eat the way I am because yeah-pre-menopause obviously isn’t calculated in to the equation, and well yeah…I don’t see that number on the scale.  BUT…I’ve just restarted in the last week or so, so baby steps, right?  With that I have been eating high protein/veggie/fruit type of diet, so here is tonight’s easy peasy dinner recipe!

What you’ll need (pork chops):

4 thick cut boneless pork chops, seasoned with kosher salt, pepper, and a dash of lemon pepper seasoning on all sides-apply liberally and set aside for about 5 minutes while you get everything preheated.

Pre-heat oven to 375 degrees.

Pre-heat a non stick pan and add extra virgin olive oil and 1 pat of unsalted butter.  Heat to high heat, and pan sear chops on both sides (5-7 minutes each side-don’t over crowd your pan!) until golden brown and transfer to a baking sheet.  *Tip-line your pan with aluminum foil for easy clean up! Place in your pre-heated oven and cook for about 10 minutes or until your chops have reached 155 degrees-let rest for 10 minutes minimum-chops will reach required temp of 160 degrees by this time.  *Tip-cover with foil while resting your meat.  It helps hold the temperature.

While your chops are baking, make your “sauce.”

Sauce

1 white onion, chopped

2 cloves of garlic, minced

1 tablespoon capers, rinsed

2 tablespoons of Kalamata olives, chopped

Zest of a lemon

1 cup of white wine

1/4 of cold water mixed with cornstarch to thicken

Kosher salt, pepper, and oregano to taste.

In the same pan you seared your chops, deglaze with the white wine (make sure it’s wine you’d drink!)

Add your onions, garlic, capers, and olives.  Reduce down the liquid by half, and add your seasonings and cornstarch water to thicken.  Add zest just before serving.  I served the spinach and pork with the sauce, who needs dressing/gravy?  Not this girl!

So in order to stay on track with food, fitness, and life in general my TRUE goal this year is to BE CONTENT.  I have said it before, but I’ll say it again.  I am, and I have, ENOUGH.

Birthday weekend wrap up

For the last 42 years, ok not that long but for a LONG time, I have hated my birthday.  I wish I could honestly figure out where this hate comes from, although I have a few sneaking suspicions that I will keep to myself.  Yet as I have grown into a middle aged adult, I truly have worked at embracing my birthday as a day of celebration of life vs. a battle of time.

And this weekend, I was reminded how very blessed I truly am.  I was surrounded by friends and family, and made to feel more special than I can even describe in words…

So this post will have less words, and more pics, because I truly can’t find the words to describe the blessings I feel today, and always.  And of course…food pics.  Because isn’t this why we run so much?  LOL!!!

So after quite a bit of deliberation I found myself looking hard at my circle of friends once again today.  I am cutting back more on social media, removing negative forces from my world, and realizing not everyone has the best wishes for us in life.

But…some people DO want nothing more than the best for us…and those are the gifts that I hold true to my heart on days/weekends like this…

Three Things Thursday

1. I was tagged to participate in a pretty fun post, but will have to work on that this weekend. HAHA, way to keep you hanging, right?

I did however get THIS cool notification after just over a year of having my blog on WP.  🙂 A HUGE thank you to those who have taken the time to like, comment, and engage with my quirky little place in the world.  Mad love to you all!

2. After working 6 days in a row I realllllllllllllllllly wanted to come home and put my jammies on and…NOT. MOVE. But after work I picked up my youngest and ran a couple errands.  I knew once arriving home I would HAVE to change in to my running clothes and hop on the mill.  I texted my friend Maria, as we had another virtual running date, and got ready.  She was running a little late, so I started on my own.  Just after hitting the one mile mark (2 miles on deck) I really wanted to give up.  My legs were sore after my run Tuesday and I found myself questioning if I’d be ready for marathon training in just ONE month after nearly a month without a single run.  My legs were SORE from a 2 mile run…really?  But then I got this text…and I knew I could do this.  No quitting.  (Thanks, Maria…truly!)

3. I admittedly haven’t cooked at all since I’ve been on single Mom duty this week.  The kids are happy with left over, sammiches, and breakfast for dinner so it’s been pretty easy.  Tonight after my run I decided to make an easy homemade pizza with a little help from the store.  My friend Kristina from @Life laugh love run asked for the recipe, so I thought I’d share with you all!

Preheat your oven to 425 degrees, and line a cookie sheet with aluminum foil-set aside while you get your ingredients ready!

1 package of corn tortilla/gluten free tortilla/wrappers

1 jar of your favorite marinara sauce.  I am lucky to have an amazing Italian market just 1/2 mile away that makes their own homemade sauce that is totally organic/preservative free!

Your favorite toppings!  Here are some of mine:

1 pepper, diced

Several mushrooms, sliced

Garlic-minced

1 package of lean/low fat/low sodium pepperoni.  I get mine again, from my amazing grocery store so I know it’s “good” for my family.

Oregano/basil

Mozzarella cheese (I only use a little as dairy and I aren’t friends)

Line the cookie sheet with the tortillas, making sure NOT to overlap.  Take 2 tablespoons of marinara sauce, and spread evenly over the tortilla.  Add your veggies next, then the pepperoni.  Sprinkle lightly with the cheese, and season with basil and oregano.  Bake at 425 degrees for about 10-12 minutes until golden brown.

Tuesday Truths!

First off, I am so very pleased to have been asked by Christina @crazymamarunner to tell my story about why I chose to run a marathon.  I was highlighted on her blog this week, and you can read the story HERE .  I found my eyes welling with tears as I read what she wrote, and re-read what I submitted to her.  Please take a moment to check it out!!

Secondly, as most of you know I have struggled with my running this and last winter.  Initially due to the artic blast we received far too early this winter, and ultimately ending with a nasty cut on my thumb Christmas day…in case you missed it, the story is HERE .  For the first couple weeks my thumb throbbed so terribly I could barely sleep, and hardly fathom running.  Along with this lack of motivation came laziness and poor eating.  Woops.  I fell in to that trap. Darn it all to H E double hockey sticks.  Yeah…I went there.  LOL

But this weekend despite crazy work hours and schedule I decided since my hubby was leaving at O dark 30 to travel this morning, I would run on the dreadmill tonight after work.  I told my family, and posted on my FB fan page to hold myself accountable.  I NEEDED to run at least 2 miles.

In stepped my friend Maria from @Runningflaps FB fan page.  We made a virtual date, and I was so giddy to have ‘someone’ to run with even if it was virtually.  I picked up my youngest from after school care and headed home.  And as I pulled on my shorts and tank that was just a bit too tight for my comfort I found myself cringing.  I shook it off, and headed down stairs to the mill.  I decided to take some of my followers advice and turned on Netflix, season one of Grey’s Anatomy.  I started slow, and found myself wanting to give up.  And this I received THIS text:

I made it two miles, and although they weren’t pretty miles, I didn’t give up. I feel like I am starting from square one, but I am at least starting.  It’s truly amazing what a month+ can do for your endurance…or should I say how it KILLS your endurance.

Day 13 of the AB challenge is done, and I am realizing quick I need to get myself in to gear for next month when my “real” training starts.  Darn my passion and love for food at times like these.  Give me ALL. The. Veggies and someone take away my quinoa chips…PLZ.  #alwayshungry

So tonight’s Truth is this:

Don’t give up, no matter the obstacles, what the scale says, or how your clothes fit.  Keep movin’ forward, and the pieces will fall in to place!

Weekend wrap up

I don’t have a lot to report this weekend.

I worked both Saturday and Sunday, and despite 95% of my weekend being pretty darn good, the nurse that chewed my butt for THEIR lack of planning sorta sunk in, and hit me hard as the weekend wrapped up.  Somehow, it’s my problem that they failed to finish their competency paperwork in a timely manner, therefore locking them out of the testing they needed to perform.  Yet anyone who works in healthcare knows that it’s ALL about rules, regulations, and proper training to keep our patients safe.

Yet I don’t have a BSN in my signature block, so this nurse decided to let me have it.  I kept my composure on the phone, apologizing profusely for a whole lot of nothing that I did wrong, and hung up the phone in tears.  I chose to let this drain my joy…but only briefly.  I drove home in silence, and after my 30 minute commute I was calm and welcomed by my family.  Life was good again.  I dropped my purse on the counter, gave hugs to my youngest who had spent the night at her friend’s house the night before and poured myself in to my welcoming bed.  I slept for TWO hours, and it was glorious.

I woke up to my hubby and youngest cooking our traditional Sunday Supper.  A dinner I normally always prepare.  But they stepped in and saved the day.

I finished the night with day 11 of my ab challenge, a hot shower, and time spent in front of the fire.  Tomorrow I have at least a 16 hour work day on deck, so I will postpone my first run of 2015 until Tuesday.

Five things, Friday

Ah, it’s been a while since I did a five things, Friday post.  This week my 5 things come with photos of a few of my favorite things this week…because isn’t every good blog post filled with pics?

Here goes:

First…tonight I had a day off because I am working the next 6 days and IL law states you can’t work more than 6 days in a row.  What did I do?  I set my alarm to take my eldest to school so she wouldn’t have to wait outside in sub zero temps, I took a nap,  I cleaned my house, did laundry, my AB challenge,  and cooked this beautiful meal for my family.  Once I perfect the recipe, I’ll post it!

After picking up my mini me from after school care I checked the mail.  It’s been a while as our drive way is hella long, and well, it’s darn cold outside.  I received this beautiful hand made apron and pot holders from my dear friend Michelle who is the most self-less person I know.  While she battles her second bout of cancer, she sews me an apron because she is concerned about my thumb, and over all well being.  I couldn’t hold back the tears.  Wow.

And then there’s this guy…We’ve had our fair share of struggles.  He travels more than I’d like.  He plays too many video games.  But at the end of the day, HE supports me and loves me, even when I am pretty tough to love.  Which is often…lol

THIS day.  This.  The day I put off for over a year because I let self doubt win, over. and. over.  ALL THE DOUBT.  And none of the confidence. But this day I took a chance.  It may have not panned out.  But darn it I sure tried and will continue to do so.  #chefwannabe My life will be forever changed because I took this chance…

Lastly there’s this little fella…this dog, this FRIEND who hasn’t left my side in years.  True love right here.

My point to this post, is to hang on to the things you love dearly.  I lost a friend from high school yesterday, without warning, and I am again reminded how short life really is.  So these are just a few of my favorite things that have touched my heart this week.

Three Things Thursday!

Ok, so my Three things Thursday post is going to go a little like this:

1. I’ve been at my current job for nearly 10 months now.  I’m finally settling in, feeling more comfortable, and really making connections with my staff, peers, and Pathology staff.  I’d been told a pay raise was in the works, as my annual merit raise was pennies since I was only with the hospital technically one quarter of last year (June 30th ends the fiscal year for our hospital).  Today when checking my pay stub, I saw that my raise kicked in and I smiled.  It’s not huge, but it made me feel really good that my hard work is recognized.  YAY. Every little bit counts!

2. Today marks the 2 week anniversary of my self mutilation – aka Christmas injury.  You can read about it here: https://movinitwithmichelle.com/2014/12/27/christmas-injuries/ I am happy to report that for the first time in 2 weeks, I was able to take a REAL shower without my uber bandaged thumb.  The wound is healing NICELY, I am able to cook again, and am looking forward to RUNNING next week!!!  Tonight is the first time I have a regular Band-Aid on the wound, but will probably add more padding when I leave the house-just for safety purposes.  It’s still very tender, hasn’t closed completely quite yet and is still very bruised.  But…it gets better every day, and soon I’ll be back it all with full force, despite lacking a slice of my digit LOL!!

 

3. We are currently experiencing Polar Vortex #2 with our 3rd day in a row of a crazy artic blast.  Temps have plummeted, schools closed, and winds are blowing at top speeds. I also just found out that I’ll be back on single Mom duty for the next month and a half while my husband travels off and on… SOOOO….What does that mean?

COMFORT FOOD!!!!  Here’s my take on a healthy beef stroganoff:

What you’ll need:

1 lb of beef chuck roast, cubed, and seasoned with kosher salt and pepper.  Place in a bowl, and sprinkle a 1/8 cup of flour (I used gluten free, Namaste brand-my fav!!) Set aside.

1 can of low fat golden mushroom soup/1 cup of low sodium beef stock.

1 white onion, diced

3 gloves of garlic, minced

2 cups of mushrooms, chopped (I used Shitake, but any brand will do)

2 tablespoons of low fat sour cream (add this at the VERY end)

4-5 splashes of Worcestershire  sauce

Thyme, chives, and parsley-pinch of each

1 cup of gluten free rice (or the rice/pasta of your choosing), cooked to package directions

Preheat your wide sauce pan with EVOO at medium to high heat. Cook your beef until golden on each side-do not cook through.  Remove from the pan, and drain the grease.  Add a touch more oil, and sauté your onions, garlic, and mushrooms for 5-7 minutes until tender.  Season with salt and pepper.

Add back in the beef, and increase the heat just a touch.  In a separate bowl, add the mushroom soup and stock and mix well.  Pour over your meat.  Add 4-5 splashes of Worcestershire  sauce.  Season by adding the Thyme, Parsley, and Chives.  Lower the heat and let simmer for 15 minutes (I use this time to cook my rice).  Add in the sour cream in the last 2 minutes, stir well and get ready to plate. Taste for seasoning, serve, and enjoy!!!

Chef on the mend

Tonight is an exciting night for me…
Why, you ask?
First, I came home from work to find my house without heat, so what did I do?  I fired up the stove of course, and prepared a hearty seafood chowder!  This recipe isn’t exact, but here’s what you’ll need to make this amazing chowder in less than 45 minutes:
Seafood Chowder:
1 large pasta/stew pot
Drizzle of extra virgin olive oil
1 large white onion, diced
1 green pepper, diced
1 red pepper, diced
4 cloves of garlic, minced
1 potato, diced
1 cup of frozen corn, or fresh if it’s in season (add this the last 10 minutes if frozen to avoid overcooking)
Crushed red pepper flakes to taste
1 can of crushed tomatoes
1 can of diced tomatoes
1 can of black beans (may omit)
2 green onions sliced at an angle for garnish
2-3 cups of stock-low sodium!
Seasoning: Cajun spice, chili powder, cayenne pepper, cumin, smoked paprika, oregano, and kosher salt and pepper-to taste.
1 back 0f 20 count large shrimp, remove the tail, cut in 3 pieces and place in a separate bowel.  Add the juice of half of a lemon,  Cajun seasoning, salt, and pepper and let marinate.  (You will add the shrimp the final 10 minutes as they are precooked).
Drizzle your pot with EVOO and add all the veggies (minus the corn) and sauté for about 7 minutes until just slightly tender.  Add your tomatoes, stock, and beans and season to taste.  Let simmer for 30 minutes to allow the flavors to develop.
Let it simmer, at least 30 minutes and don't forget to taste before serving!

In the last 10 minutes add your corn and shrimp to heat through entirely.
Garnish was sliced green onions, and serve!

Second, tonight marks the 3rd season of MasterChef junior season premier of course!  (MasterChef/MasterChef junior being literally the ONLY shows I have watched on television in the past year or so).
Wait…before you get all judgy with “reality TV is all scripted,” and stuff…Wait.

I agree, these shows do have the hint of irritating hidden advertisement and drama nestled inside each episode.  I won’t even try to say it’s truly “real” in regards to actual reality.  I mean, really…how many people would have access to a pantry like THAT to choose ingredients from?!?  I’d be in heaven…lol

BUT…having been on the other side of the show nearly, well not really nearly, I see this particular series in a different light. 😉
For behind even the most dramatic Chef down to the sweetest home junior cook. both share one common theme that is near and dear to me and that, is a PASSION FOR FOOD.  Good food, creative food…homecooked food with a touch of flare and big pinch of passion.
Although I won’t be America’s next MasterChef, I know how it feels to want something THAT bad.  To have dreams THAT big, achievable or not..
And THAT…is reality.
Oh, and the hubby saved the day by fixing the heat and I finished day 6 of my AB challenge!  SCORE!

Fate with a little bit of Fitness added in…

I knocked out my AB challenge tonight, and even made it to 24 seconds with my plank vs. the required 12 seconds.  Weak…I know.  But it’s progress so I’ll take it.  I also walked 2.5 miles today, and my thumb is healing nicely so I hope to hit the trails next week for a couple miles!  I think God was actually doing me a favor this week, as we have sub 0 temps with negative wind chills to add to the winter fun!  Those of you that know me, know I struggle in the winter.  This winter my goal is to keep movin’ despite the frigid temps, and laugh. and then laugh some more…:-) And for those of you bragging about your warm temps in the winter, I am not affected.  Winter is SUPPOSED to be cold and snowy.  It’s not always FUN…but it’s winter, and the beauty of a fresh fallen snow is still priceless.  My face, does still hurt tho…just sayin’…

Today at work, I had my weekly meeting with my boss to discuss any issues, happenings, budget, etc etc.  Often times we get off on a tangent, and today’s tangent coupled with a later conversation that  left me smiling. This lesson didn’t hit me until later in the day when one of my peers came to my office red faced and flustered.  This woman has become like a Mother to me, so I immediately asked if I could help.  She had received the news that her daughter had lost her job, and her heart was heavy trying to carry her daughter’s grief.  And instantly I got choked up, remembering last year at this time, when I had found out my position was being eliminated.  She and I talked extensively, both being women of great faith and I shared my story again of how I was at my wits end last year, as the time ticked by where soon I’d be jobless.  But then I got the call…THE call for an interview for my current job, and everything fell in to place.  Nearly 10 months later and I feel like this amazing group of people have welcomed me in with open arms and have made this my current ‘work’ home. It isn’t always about a hefty pay check or lofty raises that make the job satisfying. Nope…

It’s about the people you choose to surround yourself with, each and every day.  In my weekly meeting with my boss earlier today, he verified that he is working on my less than stellar pay, and reminded me that I am appreciated.  And that my friends, is enough for me…

So yeah…the pay check would be nice, but at the end of the day it’s about THIS.  People, moments, relationships, family, and friends.
