Weekend wrap up and goals…

With not having much of a break last week, well, no break at all in fact-I realized I’ve been slacking on the blog the last few days. Ack…my bad!

Having had worked New Year’s day, I decided to make the very most of this weekend with my family.  I work next weekend, so we decided to do all the fun family stuffs.  Friday I came home from work to a wonderfully cooked meal of BBQ chicken and veggies by my hubby, as well as to find all of the Christmas decorations had been taken down and put away.  Score.  I was ready to move past the holidays.  Friday night we relaxed and watched the movie, “Big Night” starring Stanley Tucci and Tony Shalhoub.  It is an older film, from 1996, but the story was based on the relationship of two brothers who had moved to the United States from Italy to open their own restaurant.  At first, you think the movie is going to be about food but in reality it’s about their passion FOR Italian food, and the relationship the two brothers share.  Great flick, and I highly recommend it to any food enthusiast, or movie lover alike.

Saturday we decided to take the family to see MockingJay part 1 at the theater (GREAT movie), and have dinner at a place we haven’t tried yet that is located in Geneva, IL.  Local readers, I HIGHLY recommend The Patton house, which is on 2nd street in downtown Geneva.  We had bacon wrapped figs to start, and my entrée was a spicy salmon fillet over a sweet potato puree with a maple demi glaze.  To. Die. For.

Today was my day to go shopping at my favorite consignment shop, Clothes Mentor, with the gift cards I received for Christmas.  This store makes me happy.  What can I say…I showed up with a small bag of clothes (they buy back too!) for which I received 15 dollars, as well as had a 5 dollar coupon.  At the end of my spree, I bought a cute purse, Franco Sarto shoes, and several sweaters, shirts, 2 pairs of pants and a sweater dress all for $225.00.  18 items, at an average of $12.50 cents each, and keep in mind these are all high end brand names…Ann Taylor, BCBG max, White house Black market, Nike (yes, I had to get workout clothes too!) and Banana Republic just to name a few…yup…this girl came out HAPPY as a clam.  I used to love fashion, but found that over the last several years I forgot to pamper myself too…so although I can’t afford these clothes brand new, I sure can bargain shop!

I still can’t run as my thumb is still on the mend, but am praying one more week and I’ll be cleared to run.  Starting now, since my marathon training starts in about 6 weeks I will be eating A LOT healthier, and cutting back on my wine intake…scary, I know…but it’s needed.  I am going back to my high protein diet, as it truly made me feel healthier and stronger.  I’ve fallen off the wagon and have been eating far too much rice/rice pasta.  I’ll still have these yummy things once or twice a week…just not daily.  I was however able to cook Sunday supper tonight, which tasted great, but didn’t look very pretty…my meal prep looks much nicer…LOL!

With no true resolutions this year, I can say I have lofty goals of branching out, somehow…in my career, and in my life.  What that means?  I’m not 100% sure yet…

Holidays

I think I found it…

I wrote my last post, pretty down in the dumps, wishing the Christmas fairies would sprinkle their dust on me.  I was being a bah hum bug, and truly was getting on my own nerves.  But last month, after some shifting of funds, saving money, and using the hubbies travel points we were able to schedule our 3rd annual family trip to Chicago during the Christmas season.  The kids had no clue…they kept asking, “Aren’t we going to Chicago this year for Christmas?” to which we would just smile, and say, “Maybe not this year…”

For the last couple years we haven’t traveled past a state or two, having gone to Michigan last summer for 4 days, and Chicago a handful of times.  We don’t spend money on fancy hair cuts, and have cut out all luxuries to include massages, nails, cable, and eating out at “regular” restaurants for the most part.  I cook at home more times than not.  We are truly frugal, shopping consignment for clothes, and EBay for many gifts.  BUT…we don’t cut out good food, or nice places to stay when it comes to our family.  We simply believe it’s important to teach our kids to be frugal, but also appreciate the good things in life.

So to get a deal of half off at The Drake Hotel, and be able to use points was a win/win for our family.  Our kids have always begged to stay there, but as most know, a one night stay can cost a pretty penny.  Saturday night we advised the girls to get to bed early, and pack an overnight bag.  They were GIDDY.  “Where are we going?”  We just smiled.  Pulling up to the Drake was priceless, as the girls just were beside themselves with joy.  And THERE…was my Christmas spirit.  I finally found it…in my children’s laughter.  YAY.

So here are some pics from our 24 hour trip to the city we’ve grown to love.  Chicago.  Despite the gray, overcast, and dreary weather, I found myself coming alive this weekend.  And all due to my family’s joy of being there, with, me.  We enjoyed good food, shopping, and some much needed down time.  Oh…and we walked 5.1 miles just on Sunday!  Win again!

Sooooo…at the end of the day, besides being tired, I find myself full of Christmas spirit finally.  We were able to spoil our kids at the mall due to being TRULY frugal all year, and seeing their faces made my heart melt.

And yes…there was mad jumping on the huge bed in our hotel room, just to add to the fun.  My kids were LAUGHING and my heart sang.

There it is… my Christmas spirit.  I am so glad I found it. Family…food…feel good stuffs.  YAY.

Gravitational pull

As of late, the dreary, cold, and bleak winter days have left me with little motivation to run.  In fact, I only ran once last week and probably because I put it out there for all to see in order to hold myself accountable.  I’m just not feeling it again this winter.  Although our temps are actually quite manageable, leaving for work in the dark, and driving home from work again in the dark DRAINS me.  Ultimately, winter blues suck. That. IS. ALL.   My hubby and I DID sign up for a 5K on Sunday called the Underground Polar Express, where ALL proceeds go to Suicide Prevention/awareness, a cause that touches my heart.  Check it out….www.undergroundpolarexpress.com

So I’ve really continued to pour myself into my cooking.  (HAHA, see what I did there?) I’ve kept on with my studying recipes, techniques, and experimenting with different dishes.  I have spent the better part of 2014 actually writing out my recipes, and pray I can get my E-book/Cookbook in the works next year.  Why?

Well, because I know I meant to do something OTHER than work in a hospital.  A job I didn’t choose for myself…But it’s been a good job for the last 24 years, and for that I am grateful.  I think I am just at a point in my life where I KNOW I need to be doing something I LOVE.  All the signs are there…pulling at me in a million directions.  I just need to find my “IN” so to speak.  I need someone else, other than my amazing family and friends SEE that I have a gift when it comes to creating food and say, “Hey…I think we could use talent like yours, let us mentor you…”

So yeah…that call hasn’t come yet.  So I keep putting myself out there on social media, posting my recipes, my dreams, my goals…PRAYING someone out there will see the fire I have in my soul.

Sure…I love to run, and it’s a part of my life that I wouldn’t trade.

But I LOVE to cook.  I love to create….to plate…to make my food not only pretty, but amazingly tasty too…

Even more…I love when someone takes a bite of my food, closes their eyes, and sighs in appreciation.  PURE. BLISS.
Last night while watching the “Hundred foot journey” it hit me like a ton of bricks.  The opening scene shows the main character, Hassan, as a young boy in small food market.  There were dozens of people crowded around to buy some sea urchin.  The merchant saw the crowd of screaming potential buyers, but he watched young Hassan pick up a single sea urchin, close his eyes, and deeply breathed in the fresh scent.  He sighed, and took a small bite and smile.  The merchant immediately sold the entire lot of sea urchin to Hassan and his Mother.  Because he “GOT IT.”  He recognized the beauty of the product, with the smells, the sight, and the taste of the food.  And it hit me…THIS is what I do.  I LOVE food. Good food.  Fresh food.  CREATING food.

He starts cooking with her, and asks her if she thinks he is a real Chef, not just a cook.  “Yes!!” She replies, in which my husband turned to me telling me he thinks I am real Chef…of course, I nearly cried.  If you haven’t seen this movie, I recommend it highly.

At the end of the day, we have to provide for our families, often times doing jobs we don’t love.  But as I’ve told my husband, “You just watch…ONE day I’ll make my mark on this world, and it’s going to be amazing.

Orange Chicken recipe…who needs take out?

I’ve been trying to expand my normal mid-week meals, so decided to try a version of Orange Chicken after doing some research.  As most of you know, I never strictly follow recipes, more so use them as guidelines.

Here’s my version of Orange Chicken, made easy…

Chicken:

Cube 6 chicken thighs-I prefer the thigh as the flavor of the meat is richer.  You can use the breast, but I find it tends to dry out.

Next, separate 4 eggs, keeping only the whites.  Place them in a bowl large enough to hold your cubed chicken.

Whisk in a couple tablespoons of corn starch until the mixture becomes frothy…Add in your chicken and coat well.  Season with salt and pepper, mix again, and set aside while you prepare the Orange sauce.

Orange Sauce:

In a sauce pan combine the following ingredients:

The juice of 2 oranges, along with a teaspoon of the zest (**set the zest aside to add at the end)

Soy sauce-I use low sodium/gluten free but feel free to use your favorite…1/4 cup give or take.

1 cup of stock, whatever you have on hand

A couple splashes of rice wine vinegar

Crushed red pepper flakes to taste

1 clove of garlic, minced (or use a micro plane, MUCH easier)

1 teaspoon of minced ginger (use that micro plane again, trust me!)

1 teaspoon of honey

A splash of sesame oil-don’t forget this, as it really adds depth to the sauce

Salt and pepper to taste

**Have a small cup of water with cornstarch mixed in to add at the end, bring to a boil, and reduce to a simmer.  This will help thicken the glaze.  Just before serving add in your reserved orange zest.

While your sauce is simmering, heat a wide/deep pan with oil.  I used avocado oil as I love the flavor it adds, but use your favorite frying oil.  Fry the chicken in batches, making sure not to crowd the pan.  Brown the chicken on each side, cooking through evenly.  Drain on a paper towel lined plate and finish with a pinch of salt.

To serve, place a cup of your favorite rice or noodles in the bottom of a deep bowl.  Add your favorite veggies (I used steamed broccoli and shredded carrots)

Spoon your orange glaze over just before serving (this helps keep the crunch to the chicken), and garnish with scallions and sesame seeds.

Dinner is served!  I love the fact that my family prefers this type of food over take out any day of the week!

This was (as cooking always is) some much needed therapy after a stressful day!

Weekend wrap up

I’ll admit I needed a couple extra days off after the last few weeks of work.  But…I have a job, and for that I am thankful.  The much needed break called for me to take the day after Thanksgiving off, which I am SOOO glad I did.  I don’t have a lot of time saved up, but this added day left me extra time to decorate for Christmas, clean, and scrub areas of my house that were completely neglected lately.

Yet this can bring stress too…you know, the kind of stress where you feel there just isn’t enough time in the day.  I spent Thanksgiving with my family which was just wonderful, but the chores were calling my  name.  Saturday I got up and cleaned like a crazy women…I shopped for groceries for the week, and found myself TIRED.  But I got a text from a friend inviting me out for drinks Saturday night and I JUMPED at the chance.  It was a simple two hours of laughter and fun, but just what I needed to add extra charge to my batteries.  And I saw THIS as I was getting ready…God had his paintbrush out, for sure…

I was so recharged last night, I put myself out there in my running group on Facebook, requesting a partner in crime for a run this morning.  My goal was 4-6 miles, with no pace in mind.  Karen, from Tradinginmyheels.com raised her hand, and I felt so very blessed she wanted to run with me.  So this morning we met up, and despite tummy issues I was able to get 5 miles in!  My farthest distance since the half marathon the beginning of this month.  It always amazes me the bond runners have.  I don’t know her well outside of running, but there she was to support my slow run.

I came home, showered, and promptly sat down on the couch to watch Football.  Who won?  Not sure…I was just happy to relax.  I even let myself take a cat nap on my recliner for an hour.  Sheer. And utter…BLISS.

But, it IS Sunday, so Sunday Supper needed to be prepared.  This has become so important to me as a busy working Mom, to make time at least ONE day per week to have a NICE sit down meal.  So tonight we had pork roast that was seasoned with my own homemade rub of rosemary, thyme, onion powder, crushed red pepper flakes and salt and pepper.  I grinded all of the spices in my mill, and rubbed generously on the pork.  I seared the pork on all sides, then transferred to the oven to roast at 375 degrees for just over an hour.

To accompany the roast, I made my cranberry/red wine reduction sauce.  The recipe is simple.  One bag of fresh cranberries, poured into a sauce pot.  Add half a bottle of GOOD red wine, (I used a good Cab), brown sugar, one shallot, salt, pepper, and a couple sprigs of thyme.  Cook down by half, and puree with an emulsion blender. Strain, and add a pat of butter (the real stuff) and let simmer.

Our sides included Brussels spouts and shitake mushroom risotto.

For the Brussels sprouts I first cubed a 1/4 cup of pork belly and browned.  They are also known as lardons, and this was my first time making them.  My best tip is to make sure you brown them, and drain off all the grease.   Set aside, and add in 1/4 cup of shallots, one clove of garlic both finely chopped and sauté for just a few minutes.  Add in your Brussels sprouts, and cook for about 20 minutes.  Add in your drained lardons for the last couple minutes.  DELISH.

For the risotto, I wanted to highlight the mushrooms.  I  chopped 1/2 a cup of shitake mushrooms, one shallot, and 2 cloves of garlic.  In a separate sauce pan I had 4 cups of veggie stock with 2 bay leaves on low heat.  Take a wide sauce pan and drizzle with evoo and one pat of butter.  Add in your veggies, and sauté for 2-3 minutes.  Add in one cup of good Arborio rice and stir for 2 minutes.  Slowly add in your chicken stock, one ladle at a time, cooking slowly.  Continue to add in the chicken stock until your rice is cooked al dente.  Garnish with parsley and Grana padono cheese.

Naperville Half Marathon 2014 race recap

I went into this race with few expectations.  I got lazy (too busy more so) with my training and just prayed I had enough left in the tank to get this race done, and done strong.

I woke up at 4 am, got ready and hit the road to Naperville to meet up with the gang.  I texted Andrea, letting her know I pooped…LOL.  On going joke…sorry haha!

I got to Naperville at 5:45 and waited in the warmth of my car for everyone to arrive. Everyone arrived safely at around 6:15, and we had plenty of time to get settled.  I ate my cereal bar, chugged my 5 hr energy and we were off!

The starting line was lined with flags, and I was truly moved by the beauty of it all!

We lined up at the start, getting in to our respective corrals and bid each other high fives, hugs, and good luck.  I turned and saw Claudia, a woman I met during the Fox Valley training runs I paced, so we agreed to start together.  YAY!  The national anthem was beautifully sung, (sang?) and the race kicked off…it only took about 10 minutes to cross the starting line.  (They could’ve spaced this a little farther apart, as the course was slightly crowded the first few miles).

The first several miles felt great.  I thought to myself, HEY…I can DO this…but my excitement got the best of me and I went out too fast.  Rookie mistake.  Beginning mile splits: 9:33, 9:03, 8:58, 8:58, 9:02, 8:51, 9:11, 9:53 (took a walk break to fuel during the 8th mile. I saw Karen at mile 8.5 and nearly sobbed!  A friendly face, YAY!  We hugged quickly and I kept moving.

And then came mile 9…the hill from hell where it felt we were out in the middle of no where.  I walked briefly and then saw Claudia…I tried to stick with her, but it just wasn’t happening.  But I kept her in my sights, along with her awesome hubby who was on his bike throughout several spots on the course.  Seeing him helped me keep going…

I decided the sub 2 just wasn’t going to happen…I had a stitch in my side that refused to go away.

So I high fived all the kids.  I thanked all the volunteers and spectators.  I dug deep and searched for my smile. And I ate a piece of bacon from some amazing dude grilling at around mile 11…and I kept running as fast as I could.

Miles 10 and 11 were 9:51 (another walk/stretch break), 9:20 and my right ITB was SCREAMING at me, making my right knee, and foot feel like they were on fire.  I was done.  I lost sight of Claudia, and I sincerely just wanted to stop.  But I saw her husband at mile 12 and he reminded me “You are doing this for fun,” to which I forced a smile and kept going.

And then…I saw THIS.  (Thanks, Andrea for the picture).

The stitch in my side was almost unbearable…but as I hit mile 13 and barreled up the .1 hill to the finish line (having a hill at the finish is just MEAN), I was satisfied.  Slight disappointment for yet another NOT sub 2 half briefly hit me, and the tears brimmed in my eyes. But I reminded myself I wasn’t properly trained, having only run ONE 9 miler since the Fox Valley half marathon in September.  So instead I celebrated all of my awesome friends finish times, and PR’s.  Final miles were 9:30, 9:13, 3:18 for the last .1.  I was blessed to have received my medal from Bob Miller, marathon maniac, and after a hug and smiles, I felt better.

Oh…and all the massages….all the food…and all the beer.

At the end of the day I did what I set out to do.  Complete this race in under 2:10.  And of course, spend time with some pretty cool people.

Pros of the race:

Plenty of port a johns at the start.

Lots of aid stations.

The spectators were amazing

Stretching AND massage tents.  SCORE!

The food/beer was warm/cold respectively

Cons of the race:

Disorganized gear check causing lengthy waits after the race

Not enough signage telling discombobulated runners where to go after the race

Mean security cops/guards.  Cut us some slack fellas…we just ran our butts off!

 

All in all I had a WONDERFUL time despite some self inflicted pain.  I would definitely do this face again!

Also, I was successful in my November goals by 99% only having missed out on doing yoga.  Score!

I finished this hump day with a quick dready run.  I didn’t want to run (bite my tongue, I know) but needed to keep moving…

During the work week meals are usually prepared within less than an hour.  This shrimp dish, prepared with a marinara sauce bought from my favorite local Italian market to which I added – sautéed garlic, onions, carrots, mushrooms, and celery along with added oregano, parsley, basil and crushed red pepper flakes was a WIN.  I served it over rice pasta, and it truly was a hit.  I love how the simplest yet healthy meals can make my family happy.  Who needs take out?

My daughter came to me last week in tears.  Her BFF had an injury…”Mommy, can you fix him?” She asked with tears in her eyes.  Sigh…I am not crafty AT ALL.  But I went to Hobby Lobby on my day off and purchased stuffing and a sewing kit.  “Yes, baby…Mommy can fix him.” Sigh…please, Lord.  Let this work…

So after dinner, we got our instruments ready, and our “transplant material” aka stuffing, laid out.  It was time for surgery.

The entry wound was located…and after finding an additional wound I knew we had to be careful…so every so slowly we stuffed, packed, and made sure each piece of stuffing we transplanting was in the correct place.

And after spending 15 minutes trying to thread the needle…we had great success.  It was time to start closing the wound.

After 30 minutes of preparation and dedication, Pink Bear was himself again.  And my youngest daughter found her smile…

I can now rightfully say my resume has broadened…adding in the fact that I am now a Mom, a wife, a friend, a photographer, a Chef, a housekeeper, a maid, a lab supervisor, a runner, a mover, a shaker, and yes…a surgeon.  To stuffed animals only, LOL.

Today I left the stressors of life behind me…and I nurtured the needs of my kids. Today, my youngest needed me.  And who doesn’t feel good being needed?

At the end of the day, I made time for me, my family, and with that my heart is full.  My decluttering for the day included not feeding into negativity although it was tough…

Tuesday truths-part 2…Family and Food

Two of my all time favorite things are my family, and food.  If you have been around my blog for a while, you have read of my trials and tribulations, but more so the glue that held my life together this last decade or so…

A couple weeks ago, we were blessed to have our pictures taken by Missy Donovan Photography based out of Geneva, IL.  WOW…I can’t stand my picture getting taken, but the sneak peaks today were amazing.  Here’s one of my favorites, so far…

I’ve been slacking with my cooking since my MasterChef audition, so decided to keep our dinner tonight simple.   In 20 minutes I prepared jasmine rice according to package instructions, adding salt, pepper and thyme.

While the rice was cooking, I sautéed garlic, shallots, and Portobello mushrooms in a wide pan.  I added a teaspoon of pomegranate infused vinegar, and 2 tablespoons of veggie stock and let reduce down.  After ten minutes, I added chopped asparagus and cooked for 5 minutes until still slightly crunchy.  Lastly, I added the shrimp that I marinated in the pomegranate vinegar, olive oil, and salt and pepper.  The shrimp was precooked, so I simply had to heat through.

Serve the shrimp and veggies over the rice, and you’ve got a healthy meal in less than 20 minutes.

Monday truths and week wrap up

Moving on…

Ack, I haven’t blogged in a week.  Mind you, it’s always been in the back of my mind to take the time to sit down and write…but the time just escaped me last week.  My girls go back to school on Wednesday with my eldest entering high school and my youngest starting 3rd grade.  It’s been a scramble to get school supplies, shoes, registration, dentist appointments, physicals and lastly gym shoes with ‘free time’ being sparse.  But…we got it done…and Wednesday my first born will be walking the halls of high school where life will bring her challenges, heart aches, and success stories all wrapped up in four crazy years.  Lord help me have patience and strength to help her…My youngest starts 3rd grade (and pray her cold subsides, please!)…and I pray she finds her groove this year.  Prayers all around!

My hubby and I got in two amazing 4 milers this week, and I have now been using Myfitnesspal app for a week and am down 2.6 lbs.  YAHOO.

Friday was our date night…it’s been a while, so we planned an amazing tapas style dinner at a local Italian place.  It was.  AMAZING.

We went to see the movie, “The hundred foot journey” and we both really enjoyed it.  Although I wasn’t pulled in emotionally by the acting, the story itself was profound.  It highlighted the fact that if you truly have a passion for something, you can achieve your goals!  A home cook turned Michelin (sp?) star Chef what???  Yup…GREAT motivator to not give up on my dreams.

Saturday we ran errands and finally after three years of living in our home bought curtains for our bedroom.  Baby steps, right?

Saturday night was carbloading for our 10 mile run.  I haven’t ran double digits since my half marathon in May, and this was my husband’s FIRST double digit run.

We got up before the sun on Sunday, and headed out to Geneva running outfitters for our 10 miler.  I was pacing the ten minute mile pace group.  And my Garmin died.  Just like that.  GAH….but thankfully one of my runners said he would pace us, if I would direct us…and we finished strong.  What an amazing group.

We got home early, pigged out, and tackled house cleaning.  I spent the afternoon on the couch watching “Divergent.”  GREAT movie.

I asked my hubby why he decided to run a half marathon while we shared a celebratory glass of wine…”To do something with you, of course.”  My heart sang.  After 11 years together, and 10 years (nearly) of marriage this man never stops taking my breath away.

This week marks my monthly 6 day work week…and tonight, after work I rushed home to shower, change, and head out to the marathon committee meeting and I still find myself learning so much that comes to planning a race.  Please, take a moment to thank your local race committee and directors.  It’s a job that doesn’t pay monetarily but makes you feel so darn good.

At the end of the day, I find myself counting my blessings this past week.  My  family #truths:

We don’t have a lot of ‘disposable’ money.  We get our hair cut at Cost Cutters.  We shop consignment, 95% of the time.  We don’t take lavish vacations or have fancy cars or home(s).  But we do treat ourselves once every couple months to a nice dinner or a cool running outfit (for example).  We celebrate our laughter, and embrace our tough times…together.  We may get frustrated with each other…but we always work together.  We don’t compromise who we are…instead, we figure out how we can meld together as a cohesive unit.  It’s not easy…

But we do it.

Together.

Three Things, Thursday

Three things, Thursday…
 
Sometimes we try really hard in life but just can’t seem to get one foot ahead of it all.  It all being issues that relate to our careers, our hobbies, fitness, relationships…well, all things LIFE related.  Right?  I used to be a pretty go with the flow type of person, but I have noticed that the last couple of years I have so much LESS patience when it comes to all things fake/lying/negative/mis-treatment of me or my friends/family.  What the heck am I talking about?  Bear with me here…I’ve been up since 2 a.m.  I will keep this sort of vague to protect feelings, but last night and today I found myself very HURT.  It seems, that you are truly often damned if you do/damned if you don’t.  Last night I ‘did’ and it slapped in the face like a hot dagger.  And it made me very sad.  So what did I do?  I called my Mom…because although we only talk once every few weeks or so, talking to your Mom makes everything better, even at the age of 41.

Tonight after work, instead of going home and cooking a nice dinner I have to go to…THE DENTIST.  I loath the dentist, in fact, believe I woke up at 2 a.m. due to anxiety of said appointment.  My stomach hurts, I have a headache, and yeah…I get to have my teeth drilled on for almost 2 hours tonight.  Looks like I will be missing my Thursday run, and having that extra glass of wine tonight.  (We got back together, don’t judge-lol).

Despite my icky night and lack of sleep I still came to work with a smile.  I work with a pretty crazy group, and they make smiling so much easier every day.  We also ordered stuffed pretzles for lunch from a local place called “Gnarly Knots” along with soup and they were DELISH.  I chose a plain salted pretzle with French onion soup.  What’s not to smile about?
