Weekend wrap up

I’ll admit I needed a couple extra days off after the last few weeks of work.  But…I have a job, and for that I am thankful.  The much needed break called for me to take the day after Thanksgiving off, which I am SOOO glad I did.  I don’t have a lot of time saved up, but this added day left me extra time to decorate for Christmas, clean, and scrub areas of my house that were completely neglected lately.

Yet this can bring stress too…you know, the kind of stress where you feel there just isn’t enough time in the day.  I spent Thanksgiving with my family which was just wonderful, but the chores were calling my  name.  Saturday I got up and cleaned like a crazy women…I shopped for groceries for the week, and found myself TIRED.  But I got a text from a friend inviting me out for drinks Saturday night and I JUMPED at the chance.  It was a simple two hours of laughter and fun, but just what I needed to add extra charge to my batteries.  And I saw THIS as I was getting ready…God had his paintbrush out, for sure…

I was so recharged last night, I put myself out there in my running group on Facebook, requesting a partner in crime for a run this morning.  My goal was 4-6 miles, with no pace in mind.  Karen, from Tradinginmyheels.com raised her hand, and I felt so very blessed she wanted to run with me.  So this morning we met up, and despite tummy issues I was able to get 5 miles in!  My farthest distance since the half marathon the beginning of this month.  It always amazes me the bond runners have.  I don’t know her well outside of running, but there she was to support my slow run.

I came home, showered, and promptly sat down on the couch to watch Football.  Who won?  Not sure…I was just happy to relax.  I even let myself take a cat nap on my recliner for an hour.  Sheer. And utter…BLISS.

But, it IS Sunday, so Sunday Supper needed to be prepared.  This has become so important to me as a busy working Mom, to make time at least ONE day per week to have a NICE sit down meal.  So tonight we had pork roast that was seasoned with my own homemade rub of rosemary, thyme, onion powder, crushed red pepper flakes and salt and pepper.  I grinded all of the spices in my mill, and rubbed generously on the pork.  I seared the pork on all sides, then transferred to the oven to roast at 375 degrees for just over an hour.

To accompany the roast, I made my cranberry/red wine reduction sauce.  The recipe is simple.  One bag of fresh cranberries, poured into a sauce pot.  Add half a bottle of GOOD red wine, (I used a good Cab), brown sugar, one shallot, salt, pepper, and a couple sprigs of thyme.  Cook down by half, and puree with an emulsion blender. Strain, and add a pat of butter (the real stuff) and let simmer.

Our sides included Brussels spouts and shitake mushroom risotto.

For the Brussels sprouts I first cubed a 1/4 cup of pork belly and browned.  They are also known as lardons, and this was my first time making them.  My best tip is to make sure you brown them, and drain off all the grease.   Set aside, and add in 1/4 cup of shallots, one clove of garlic both finely chopped and sauté for just a few minutes.  Add in your Brussels sprouts, and cook for about 20 minutes.  Add in your drained lardons for the last couple minutes.  DELISH.

For the risotto, I wanted to highlight the mushrooms.  I  chopped 1/2 a cup of shitake mushrooms, one shallot, and 2 cloves of garlic.  In a separate sauce pan I had 4 cups of veggie stock with 2 bay leaves on low heat.  Take a wide sauce pan and drizzle with evoo and one pat of butter.  Add in your veggies, and sauté for 2-3 minutes.  Add in one cup of good Arborio rice and stir for 2 minutes.  Slowly add in your chicken stock, one ladle at a time, cooking slowly.  Continue to add in the chicken stock until your rice is cooked al dente.  Garnish with parsley and Grana padono cheese.

November goals…

Oops, I am a day late in my November goal post I promised myself I’d write.

Better late than never, right?

With running/racing season nearing it’s end for me, I decided I would make goals for myself for each month of winter.  Last winter was brutally rough for me, between being injured and living in Chiberia with the Polar vortex nearly wiping me out I knew I needed to start this winter off with a positive force.

November goals:

Yoga at least once per week

Weight training 3 times per week

Dreadmill running 2-3 times per week, even if its just a couple miles

Epsom salt baths, weekly

Continue decluttering at least ONE space in my house/life EVERY week (I will post for accountability)

Continue cataloging/blogging my recipes so I can get enough documented recipes to work on my e-cook book.

Monday Motivation, and stuff…

I didn’t get my run in, Sunday.  Nope…although I had planned on a quick short run of 3 miles, my body protested and instead I found myself stripping off my scrubs Sunday at 3 p.m. and pouring myself into the freshly washed sheets that embraced me lovingly with their freshly perfumed scent after just coming out of the dryer.  I set my alarm for 4:30, smiled sheepishly at my running shoes,  and as soon as my head hit the pillow I was OUT.

Work this weekend…well, was work.  I am so far out of my comfort zone trying to manage an ENTIRE laboratory vs. just my section so by Sunday afternoon my brain was fried.  Between nasty phone calls from angry customers, and trying to troubleshoot problems in which I didn’t even understand the process, I needed a NAP.  Hmmm…this seems to becoming a pattern on my blog lately, no?  LOL

I admit, I don’t get enough sleep…my “free time” in the evening starts at around 8-9 p.m. and with that, I mean time to get cleaning, laundry, meals prepped and chores done that I’ve let pile up far too long…But I wouldn’t trade a single second for the world.  Although I’d love if someone went grocery shopping for me, since I forgot to squeeze that in today…

Sunday night, I was blessed to spend the evening with friends, celebrating one of my running friends birthday.  It took my break away, the love that can be felt in a room full of people who primarily run together.  We don’t work together, we don’t have kids in the same schools or sports, we don’t go out very often outside of lacing up in the wee hours of the morning to run or race.  But get a group like this together on any given night, let alone a birthday and you will feel the connection and bond for miles.  These friends have stuck with you in the toughest of miles, they have laughed with you on long runs when your delirious mode sets in full force, and they have helped keep you motivated to KEEP MOVIN’ FORWARD.

Today, I was able to reconnect with my sister that I haven’t seen since May.  She and I, along with my kids, and hers minus 1 met for lunch today.  IT WAS GREAT.  Man I  miss those little people (although most of them tower over me already, lol), and her SO much.  We’ve agreed this will become a habit!!!  It was great to chat, eat good food, and just let the kids be silly.  Maybe too silly for a restaurant, but hey, they don’t see each other very often, LOL.  She has always been such a huge inspiration to me, and I need to make more time for her and her amazing family.

I should’ve come home and cleaned…but instead I watched “Hook” with my daughters after running to Target for new swimsuits for our mini-vacation to Michigan in 2 weeks.  My first “Mom” suit, and I think it’s pretty cute!

I did make this amazing crab salad for dinner.  Super easy, and pretty healthy.  I also made my own take on dressing using blue cheese yogurt dressing, to which I added crumbled bacon, chives, and garlic to make it complete!  DELISH!

I’ve been pretty lax in my training this summer, and I have to admit despite missing the mileage of a full marathon training schedule, it has been great just having fun with my running.  The winter of 2015 will bring full marathon training and I know my legs will thank me for relaxing this summer/fall.

At the end of the day, I find myself beyond thankful that I have remained pretty healthy despite my right knee acting up from time to time.  I think resting last winter and running only casually helped, and I will repeat this “resting” process as my knees have nearly 30 years of mileage on them.

Recipe and real life sharing time…

The first recipe I’ll share since so many have requested it, is my roasted carrot and red pepper with onion puree. This can be served with your favorite protein, salad, or whatever sounds good to you at the time!

Preheat your oven to 375 degrees
Gather the following ingredients:
4 large carrots, chopped into bite size pieces
2 red peppers, chopped
1 small white onion, chopped
2 cloves of garlic, minced
Mix these ingredients in a large bowl, and season with avocado oil, kosher salt and pepper, Mediterranean oregano and basil, cayenne pepper, and cumin. I don’t ‘measure’ more so use a pinch of each until it smells just right…
Mix well, and spread on a cookie sheet that has been lined with aluminum foil (spray with cooking spray) and roast at 375 degrees for about 25-30 minutes.

While the veggies are roasting, get your food processer out…add 1/2 cup of veggie stock, 1 pat of unsalted butter, and a dollop of Greek yogurt.
Take the roasted veggies out of the oven, and let cool for about five minutes.
Transfer them into your food processor and pulse on high until you achieve desired consistency.

Next, we have a super easy pistachio crust that will add a yummy crunch to any protein.
1-pistachio crusted tilapia
What you’ll need:
2 cups of pistachios (I employ my daughter’s help to de-shell them)
2 cloves of garlic
2 teaspoons of lemon zest
2 teaspoons of avocado oil
Kosher salt, pepper, oregano and basil to taste
Throw it all in your food processor and pulse until the mixture is at a breadcrumb consistency.
I used Tilapia that I patted dry and seasoned with kosher salt and pepper. Place on a baking rack that has been sprayed with non stick spray, and liberally apply your pistachio mixture on top of your protein, and bake at 375 for about 20-25 minutes depending on the protein. Serve with your favorite sides, and enjoy!

I am trying my best to come up with healthy substitutes for family favorites that will leave my family and our appetites satisfied.
I am realizing that the extra weight I am carrying is my fault, and my fault alone.
I have substituted breakfast for protein shakes, and am choosing proteins and veggies over French fries and chips (98% of the time).
I am placing my health, and my happiness in my OWN hands, and have seen so many fabulous changes in such a short time…
I am down 4 lbs, with 6 lbs to go, and am not giving up on my dreams of a sub-2 hour half marathon.
I am not letting distance snobs that say “oh it’s JUST a half marathon” take away from my joy…

For part of moving forward, is starting at square one-with healthy eats, positive attitudes, and above all-confidence in all that you do…be it work, cooking, family, or fitness…the race is yours to win…
