Happy Sunday! I spent the last couple of hours cooking and meal prepping for the week. Baked chicken, steamed veggies and brown rice will be our main menus. I did make some yummy chicken soup for dinner with diced carrots, sweet potatoes, poblano peppers, onions, garlic and chicken. I seasoned with all kinds of spices, going towards lots of warm spices like cumin, turmeric, paprika and garlic/onion powder. Finished the day off with my plank.

I still cook for one. A large pork chop today that will do 3 days. Tomorrow bbq shredded pork, the balance a stew, or soup.

That looks really good. I need to plan my meals better. I have a hard time cooking when I work until 5 and nothing is out of the freezer. I just grab whatever is here – often that’s cereal. I got an Instant Pot for Christmas last year and have yet to use it. Maybe I should give it a go. That soup sounds and looks great.

I do the same thing if I don’t prepare a few things ahead of time and then of course I gain weight.

That’s my worry. Especially this time of year with all the holiday parties thrown into the mix. I really need to be better with my meals when I am not partying. LOL
