Happy Monday!!! I took a mental health day from work to get some errands and shopping done today, as well as catch up on some rest. The hubby joined me for a 3 mile walk, and we grilled pork chops and I made roasted romanesco broccoli. Topped the pork with my famous vinaigrette made with Dijon mustard, lemon juice, minced shallots and garlic and salt and pepper.

today was supposed to be a rest day after a bust weekend, a 7K was needed so badly…the hot the gym..started with legs, and heck, why not everything else, sanded a wall, getting ready to paint, made stir fried thai chicken and rice that I know my son will hate, but until he cooks, he’s gotta eat what I cook or starve….and yes, I do sound more and more like my dad
