Also made a yummy dinner Of parsnip purée, roasted carrots and salmon.

I love parsnips. That purée looks fantastic.

Thanks!! I just boiled the parsnips, and puréed them with low fat cream cheese, a pat of butter and a little avocado oil. Seasoned with salt, pepper, garlic and onion powder.
