Here is the recipe for my spicy broccoli puree! Note, I failed to take proper pictures other than my perfect bite, so all but the first picture are from Amazon and Pinterest just to give you an idea. 🙂
Here’s what you’ll need:
2 cups of steamed broccoli or broccolini if you can find it. I think it’s a bit sweeter, but either will do.
Reserve 1 cup of the steaming liquid for puree
Calabrian chili flakes or crushed red pepper flakes to taste
1/2 teaspoon of garlic powder
salt and pepper to taste
1 pat of unsalted butter
Add the steamed broccoli, seasonings and butter to your food processor. Pulse on high until you get a creamy consistency, adding in little by little the reserved steaming liquid being careful not to get it too watery.
Serve with your favorite main dish!
Do you puree your veggies? What is your favorite veggie dish!
I hope you all enjoy this recipe, and I look forward to a lot more recipes to share this year!
Cheers!
Michelle

Michelle, I have been so absent from everything since trying to get into school last summer and starting in the fall, but you had me at ‘Spicy’ on this post 🙂 I will have to try this. I’ve never been good with food processors… do you have a recommendation on what to look for? And what did you pair this sauce with? Super yummy! xo Teri

I have a Kitcheaid I believe. Get a quality one for sure. I paired this with crispy potatoes, pork, and sautéed Beech mushrooms. 🙂

That first photo looks AMAZING! But no, I don’t puree my veggies too often (unless you count smoothies). I like to chew & I really love veggies — if only they were easier to prepare!

Roast your veggies with olive oil, salt and pepper. Easy and healthy!!! It’s my favorite way to make them!

I’m not a fan of pepper, so I leave that out, but I otherwise that’s what I do for pretty much ever veggie under the sun. Although tonight my husband is actually grilling!
We’re not having 70s — not even 60s (tomorrow, maybe) but it’s warmer than it’s been in a long time.
I sear steaks indoors sometimes now, but that has a tendency to set off the smoke alarm. Even though the steak comes out good!

Yum, this sounds delicious! I’ve never tried pureeing broccoli before. I’ve done it with winter squash and sweet potatoes but that’s about it.
