Well gang, we are just about at the half way point of my husband’s deployment. Sadly, keeping up with a career, a home, 2 kids, a dog, and everything in between has left little time for blogging. But, I’m still here!!! If you’ve been reading here lately, I’ve discussed that I am keeping the faith for a career change in the future and that hasn’t changed. Nothing has transpired as of yet, but the magnetic pull I feel every single day that there IS something more is so strong I find it’s tangible.
I HAVE started running a little again, just a couple 2 milers last week, but it’s something. I’ve also started cooking again, which makes my heart just happy. Moving forward I am going to try a new recipe that will challenge my skills-every week-and I’ll highlight what I made for you as well as critique how the dish turned out. I’m a huge collector of cookbooks and cooking magazines, so it’ll be fun to try out some new recipes! I figure it’s a good challenge for me, and it will keep me accountable here in blog land. More to follow on that…
With that, I think I’ll just give you a snap shot of my week in pictures which include my beautiful daughters, (S is starting 5th grade and had band camp last week, and J is going to be a JUNIOR…sigh) some of the dishes I cooked, and a couple of my work outs.

That food all looks so beautiful — my food photography is usually rather unappealing! I’d love to have you come cook for me because life has been so busy it’s been hard to do. I collect cookbooks, too. Mostly ecookbooks these days.
Have you ever considered looking for some sort of job in the food industry? Those scallops . . .
6 months. Wow. At least you’re on the downhill side now (not that that makes it any easier).

The top pics are from our favorite restaurant…but the bottom ones are mine! It’s funny you should ask that question….when my husband gets home I am going to look at getting a second job as a line cook to get my hand in the business. One day I want to own my own place. Yes…downhill we go!!!! My vacuum broke yesterday to ring the halfway mark, LOL!

Oh no (about the vacuum). Believe me, your food looks good, too. I consider it a win if I actually make dinner. It’s leftovers for tonight — although part of the problem is that I’m making different meals for myself than for my husband, since I eat mostly vegetarian.
It’s just easy to see that your heart is with food. Mine, too, but I don’t want to work that hard! I did once apply for a job at a bakery, many, many years ago. I even brought with me some bread I had baked. 🙂 Back before there were bread machines.

Thanks so much, Judy. I have to keep believing that my dream WILL happen one day!! Leftovers are a win in my book, but often times I’ll recreate them somehow in to a new dish. Working in a bakery would be so much fun, but not for the waist line, HAHA!

…you’re halfway there…. Is it Bon Jovi?? Haha! The change of season seems to renew my interest in cooking and I’ve been refreshing the menu around here. Your food looks delicious. I’m glad you have your beautiful girls for support. When we lived in England, I moved back to the states 3 months before my hubby did. That’s the longest we’ve been apart.

Oh wow, 6 months already. It felt like he just went. Time passes by so quickly. Your daughters are so adorable. I never wrote a comment, but loved your post on celebrating birthdays. Such a great day it sounded. I wish I get the opportunity to do that for my children.

I completely understand where you are! My husband was deployed for one year back in 2011 while I manged three boys ranging from 6th through 10th grade. Not an easy task, I know. I kept reminding myself of the famous quote from “Steel Magnolias” (being a Southern girl, it really spoke to me)….’that which doesn’t kill us only makes us stronger’. Deployments stink, but the homecomings are spectacular! Keep up with the running…it’s what got me through it! Praying for you!

I think that you are doing fantastic, I was a single parent and it is HARD! I love the pictures of you and your daughter planking together & the healthy meals you are cooking! I will continue to keep you and your family in my prayers. Enjoy the time you have with your daughters, they grow up so fast, my daughter grew up and moved to Denver, married with a baby (my beautiful granddaughter) and I miss her, but we continue to move. Living alone has its own challenges but it also has benefits.

Half way through is awesome. I don’t know how you do it. My husband will be away for a few weeks and I will be alone with a new house, 1 year old and a dog. I’m a little scared. I know I can handle it but I didn’t realize just how heavily I rely on him at times. How you had time to make that amazing food is beyond me! You have a beautiful family!

Thanks! I don’t know how I do it, either…I guess I have no choice to be honest, but there are days where I just want to crawl back in to bed and hide. So I do my best to celebrate the good days to make the bad ones a little less icky.
