In efforts to keep my spirits up I decided to create a yummy and healthy snack with our leftover pumpkin seeds.
Preheat the oven to 300 degrees and line a baking sheet with foil, then spray with non-stick spray. This recipe is for about 2 cups of seeds that have been rinsed and dried for 24 hours.
Place the seeds in a large bowl and add either 2 tsp of unsalted butter or extra virgin olive oil. Mix well. Next add 2 tsp of kosher salt. I added cayenne pepper, paprika and a touch of cumin. Mix well and pour into the sheet pan evenly. Roast for 45 minutes, stirring about half way through to ensure the seeds are toasted evenly.

This sounds tasty. I have only roasted pumpkin seeds once. It was years ago and I burnt them. I will have to give it another try.

I LOVE pumpkin seeds. But bring from Baltimore, I always roast some with Old Bay on them.

I love them and they’re a great source of Magnesium which I have a hard time absorbing so the more the merrier.

We love roasted pumpkin seeds too! Just made a batch last weekend, but we don’t dry ours out first though! 😀

I adore pumpkin seeds…I can actually eat them raw straight out of the pumpkin. Spaghetti squash seeds too!!

I buy them normally too, but during Halloween I always roast up the seeds from our pumpkins!

Yum! We always roasted our pumpkin seeds. Now we don’t carve pumpkins with the boys. Tom did carve one, and he did something funky with the seeds….

My kindergarten teacher baked pumpkin seeds one cool fall morning with pumpkin cookies and they were the best thing I had ever eaten! I have yet to be able to recreate those seeds.
